Our organic matcha plantation is in mountain highlands in Toyota-shi,aichi prefecture.

The young tea leaves are shaded from direct sunlight.There are two ways to shade sunlight.

Process From Harvest to Matcha / 抹茶の製造工程

Early in may,the baby leaves are carefully picked.

The tea harvested tea leaves are transported to Aracha plant.

The tea leaves are steamed to stop fermentation.

The leaves are dried at a high temperature for about 20minutes in a Tencha Furnace.

The dried leaves are called Aracha Tencha(Crude leaf). Well-dried Aracha is soft and contains a vivid deep green color. High quality Aracha has distinctive aroma similar to seaweed.

this is called shiage Tencha(Finished leaf). Stalks and veins are removed and the leaves are evenly cut into small pieces.
